Special Sambar - for Idly Vadei 1. Toor dhal – 1/4 cup 2. Onion – 1 med size or Shallots(small onions) – 12 – 15 nos 3. Tomato – 3 small or 2 med size 4. Choice of Vegetable - { ( Drumstick – 1, scrape the skin and cut into 5 cm pieces) or, (Brinjal – small – 3 , slit into 4 or Long brinjal – 1 cut into cubes) or, ( Ladies finger – 6 to 8 cut into 1 ” length) or, (Beans -Avarakai – 6 – 10 pieces, cut into 1″ length)or , ( Potato – 1 med size, diced into cubes)or , (carrot – 1 big, cut into small pieces) } 5. Tamarind juice – 1 tsp or Fresh tamarind – 1 small lemon size. (soak in water for 15 mins before preparation) 6. Curry leaves – 1 sprig 7. Corriander leaves – 1/4 cup (finelychopped) 8. Mustard seeds – 1 tsp 9. Cumin seeds – 1 tsp 10. Oil – 2 tbsp 11. Salt – as required 12. Asafoetida – 1/4 tsp 13. Chilli powder – 1 or 2 tsp (according to need) 14. Corriander powder – 1tbsp 15. Turmeric powder – 1 tsp 16. Garlic – 5 to 7 pods (crushed) PREPARATION: 1. Pressure cook Toor dal with 1 tsp salt and 1/2 tsp turmeric powder for 5 whistles or 15 mins. 2. Heat oil in a deep bottomed vessel or pan, splutter mustard and cumind seeds. Dash a pinch of asafoetida and add curry leaves. 3. Add the crushed garlic and the sliced onions or shallots with 1 tsp salt and sauté it for a minute and add the choice of vegetables. 4. When the onions turn pink, slip in the finely chopped tomatoes and stir it. 5. Now, add the turmeric powder, chilli powder and corriander powder to it. Do not stir. Cover and cook in low flame until the tomatoes are mushy. 6. After 2 minutes, remove the lid and mash the mixture. 7. Now, mash the cooked toor dal and add it to the mixture. Add 1 cup of water or the remaining water with the cooked dal. Taste it. If you need little more tangy…add the tamarind mixture to it. Otherwise leave it as well, because the tomatoes itself has some tangy taste. 8. Add corriander leaves and allow it to boil with the lids on in medium flame. 9. You will get a pleasant aroma, when the toor dal and the tomato mixture gets blended. Then, remove from fire and garnish with corriander leaves. 10. Serve hot with rice, Idly, Dosa.
