Spicy Cheesy KALE CHIPS! Oh yes! Its time to ditch the potato chips and bring in the kale chips. I love to sit down in front of a good movie and snack on something but before you know it the whole bag is gone and you are wondering where it went... then you find it...on your thighs! So, here is a healthy alternative and if you eat them all you dont have to feel so guilty! How can you go wrong with cheesy kale chips? They are extremely delish and there is actually no cheese in them (but they really taste cheesy!!) so they are great for vegans as well. You will need: 1 bunch of Kale 1 cup of plain cashews soaked for about an hour or two to soften (no salt unroasted) 1 Red pepper 3-4 Tablespoons fresh squeezed lemon juice 1 Tablespoon of Agave or honey 2 Tablespoons of Nutritional Yeast or more if you like. 1/4 Tsp Tumeric 1/2 Tsp garlic 1/2 Tsp Himalayan Salt If you would like em spicy then you can add 1/2 tsp cayenne pepper or more to your liking or Red pepper flakes Rinse and dry Kale (the sauce will stick better to dry kale). Cut off stems and tear kale leaves into bite size pieces. Blend all ingredients together in a high powered blender or food processor. In a large bowl mix Kale and sauce together. I like to do it in small batches to make sure all the kale gets coated well. I also like to make some of the leaves heavily coated with cheese sauce and some others lightly coated just for variety. If you have a dehydrator.. Dehydrate at 118 degrees over night or for a few hours then transfer onto mesh sheet and dehydrate again til crispy. If you are using an oven...pre heat to 250 degrees. Put Kale chips on lightly greased baking sheet and bake for 1 hour. Check periodically to make sure the do not burn. Bake until crispy! NOW...ENJOY!
