Spinach and Feta Stuffed Chicken Breast, Broccoli and Cheese Rice, Cucumbers and Tomatoes. *SPINACH & FETA STUFFED CHICKEN BREAST* 2 Boneless chicken breast (fillet and beat flat) (do not cut all the way through) 2 cans spinach (drained well. Smash til no water) 1/4 cup of chopped onions 1/2 cup crumbled feta cheese 1/3 cup seasoned bread crumbs 2 TBLS mayonnaise Seasoned Salt (to taste) Pepper (to taste) Garlic powder (to taste) Onion powder (to taste) Line a cookie sheet with tinfoil. After cutting breast in half (not all the way through) and beating flat, sprinkle on both side of the chicken breast, the salt, pepper, garlic and onion. Mix the spinach, feta and onions together. Place in center of the breast. Close breast and fold over. Spread a TBLS of mayonnaise on each breast and divide the bread crumbs between the two, coating well. Place a piece of tinfoil tented over the top and bake at 400* for about 20 minutes. Remove foil and bake for about another 15-20mins.,til inside is no longer pink and it has browned on the outside. Rice was packaged Cucumers & tomatoes done in Italian dressing.
