Spring Dip with Cucumber, Chives and Radishes 1 cup cottage cheese ½ Tablespoon prepared horseradish ½ teaspoon seasoned salt 1 cup peeled, seeded and minced cucumber ¼ cup finely chopped radishes 4 Tablespoons minced fresh chives 4 Tablespoons minced fresh parsley 1 Tablespoon fresh salad burnet Directions: 1. Place cottage cheese and horseradish in medium bowl, and use an immersion blender to puree until smooth. 2. Whisk in seasoned salt. 3. Fold in remaining ingredients and transfer to serving bowl. 4. Chill slightly (20 to 30 minutes) before serving. 5. Serve with light, crispy crackers or vegetable crudités.
