Started a Nutrition Challenge today with Camp Gladiator, thanks to my good friend and CG trainer, Stacy Buky…determined to have a better clean eating lifestyle and inspire others to reach their goal! Here is a recipe I used today for Clean Chicken Salad…so yummy! Clean Chicken Salad: -2 cups of shredded chicken (I cook mine in the crockpot overnight) -1 chopped red onion -1/2 cup of chopped celery -1 cup of Homemade Ranch Dressing (make with Greek yogart) -1/2 avocado cut up for the top Homemade Ranch Dressing: -1/2 to 3/4 cup of Plain Greek Yogart -1 tsp (or more to taste) of dried dill weed -Salt and pepper to taste -1 small garlic clove (I used 3 b/c I love garlic!) -4 tbsp of olive oil -2 tbsp of shredded or grated parmesan *Put yogurt, garlic and spices in blender or food processor and blend until smooth. Very slowly add oil so that it emulsifies. Use immediately with chicken salad and save extra for veggie dip!
