Steak Grilling Tips from Chef Kim Stacey as featured on @therickhoweshow 95.7FM 1) Research the different cuts of meat to establish your preference of fat content and price 2) When Marinading, the longer the better….overnight is the best but a couple hours should be fine to soak the flavours into your beef 3) If you don’t have time to marinate FRET NOT, with a decent fresh cut of steak you only need to sprinkle some sea salt and ground pepper on it before grilling to bring out the delicious natural flavours of the meat. 4) BUY LOCAL meat from your local farmer and notice the difference in flavour! I like Oulton’s Family farm in Martock Nova Scotia. 5) Bring meat to room temperature to ensure consistent cooking temperature. Usually about 30mins after you take it out of the fridge 6) Make sure your grill is clean and sufficiently preheated to be nice and hot 7) Grill each side on high, only flipping ONE TIME…don’t play with your food….grill for about 3 mins on each side for a 1 1/2 inch steak to sear in the juices/flavours 8) If you like medium rare to medium cooked, three full minutes on high should be sufficient but to cook more well turn flames down to low and continue cooking the steak slowly to avoid burning the outside before the inside is cooked. 9) DON’T flip your steak too much- The more you flip it the tougher it will get. 10) AND MY BIGGEST PET PEEVE with steak grilling is when people PRESS the steak flat with their spatula!!!! OUCH. – this squeezes the juices and the healthy fats out, it can also cause the flames to rise aggressively and burn your meat. 11) Besides being one of the most available sources of high-quality protein, beef also provides many important nutrients such as iron, zinc, and B vitamins
