Steak and Sausage Casserole. Ingredients: 1 kg beef steak, cubed in large cubes 1 kg pork sausage, each cut in half 1 kg potatoes, cleaned and cut in quarters 500 g pickling onions, cleaned and whole 500 g celery, rough chopped 500 g leeks, cleaned and cut in large pieces 500 g carrots, cleaned and cut in large pieces All purpose flour Crushed garlic Beef stock Red wine (optional) or Apple cider (optional) Double cream Tomato paste Vinegar Sugar BBQ spice Celery salt Salt Black pepper Oil for cooking Method: Mix flour, BBQ spice, salt, black pepper and celery salt to form a coating for the beef steak. Coat the cubes of beef steak in the mixture. Heat oil in a large, oven proof Dutch oven type pot, and brown the steak cubes. Remove the steak, and brown the sausages. Remove the sausages, and lightly brown the vegetables. Remove the vegetables. De-glaze the pot with wine, cider or beef stock. Put the steak, sausages and vegetables back into the pot. Add garlic, tomato paste, vinegar and sugar to the pot, as well as the rest of the flour and seasoning. Mix in. Add a cup of red wine, or cider, or beef stock. Add a cup of cream. Add more beef stock until all the ingredients are covered. Bring to the boil and then transfer to preheated oven (140 c). Cook in oven for at least two hours. Transfer to casserole serving dish, and serve with crusty bread.
