Steamed Vegetable Salad with Muktuk: Created by Fran McCue, from Noorvik, AK (Serves 2 people) Youll need: (wash and prepare vegetables) 10-15 fresh asparagus, cut into thirds (snap hard stringy end off) 2 cups broccoli, chopped into smaller pieces 20 sugar snap peas (trim tips) 3 red, 3 yellow small peppers cut into fourths (remove stem and bitter ribs) or 1/2 each of red and yellow bell pepper, medium sliced 5 large leaves of purple or green kale, cut into large pieces (fourths) 20 thinly sliced pieces of muktuk 1/8 cup slivered almonds (optional) 1/4 cup dried cranberries or fresh strawberries (cut into fourths) Dressing: Soy sauce Avocado oil or extra light olive oil Pepper (optional) Place vegetables in stainless steel steamer over boiling water and steam until semi-tender. About 10-12 minutes. Check for doneness., not over cooking them. (a little undercooked is alright, as all of these vegetables can be eaten raw and it adds a nice little crunch) Overcooking the vegetables isnt as pretty or desirable tasting. Cut muktuk into thinly sliced pieces, set aside. When vegetables are done, assemble ingredients onto salad plates or into large shallow bowls, placing half of the vegetables on each plate. Sprinkle with dried cranberries, slivered almonds and finally - the sliced muktuk, arranging in a way for a pretty presentation. (we eat with our eyes first) Drizzle avocado or light olive oil over salad, doing the same with the soy sauce, being careful not to use too much soy sauce as it is high in salt and can ruin the beautiful salad. You can always add a little more to taste. This salad has excellent flavors that go great with muktuk!! Totally enjoy!!
