Steamed syrup sponge • 100g self raising flour; sifted • 100g butter • 100g sugar • 30ml milk • 2 eggs, beaten • 1/2 tsp vanilla essence • grated zest of 1/2 a lemon • 3 tbsp of golden syrup Method: Cream the butter and sugar together until light. Gradually add the eggs and vanilla essence. Mix well. Finally add in the flour, milk and lemon zest. Put the golden syrup in the bottom of the rice pot. Spoon the mixture on top. Put lids on at 90 degrees to each other. Place in microwave. Cook for 6 minutes on high. Leave a couple of minutes to rest. Turn out onto plate. Serve warm with more syrup warmed and custard.
