Stick your pan back on the heat and let the crepe cook on the first side. Its time to flip when your crepe will easily slide around the pan. The hardest part to this whole meal....is the flip... you CANNOT use a spatula...if you do..you WILL break it. There should be a light golden ring around the edges and little bubble marks...this is the sign of a perfect temperature. If they are dark, or burn adjust your heat. I ALWAYS throw away the first one...dont be sad if you do too.
