Still havent started dieting for July contest, so i made a batch of these protein balls. They really taste great , and are a healthy alternative for snacks or dessert. This time, i made them with ON Platinum Chocolate Whey Protein Isolate, Organic Oatmeal, Almond Milk, Organic Almond Butter, Organic Dried Cherries, Raw Cashews, and Organic Coconut. Ive posted this recipe in the past, but its been a while. Thought i might offer it again. EXCELLENT. Recipe for “No-Bake Chocolate Nut Protein Balls” Mix the following in a large bowl. a. 3 cups plain oatmeal (organic is preferred) b. 4-6 scoops chocolate protein powder c. 0.5 cup organic peanut butter or cashew butter or almond butter. (no added sugar or trans-fats, of course) d. 0.5 cup fat-free and sugar-free soymilk. Almond milk is a better choice, but not easy to find. e. OPTIONAL: 0.33 cup of organic raisins or dried cherries and / or 0;33 cup of unsweetened coconut flakes. I like the coconut flakes best because the chocolate coconut taste is good, and the coconut helps minimize the stickiness of the mixture. To mix, its best to use hands. After mixing, roll into 1.5 inch diameter balls. Refrigerate or freeze after rolling. They will last longer, and harden more. Take out of freezer perhaps 20 min before eating. Enjoy.
