Stir-Fried Cabbage (6g Carbs per serving) Yields: 5 cups = 10 (½ cup) servings Start to finish: 30 minutes Ingredients: 2 tsps extra virgin olive oil 2 tsps untoasted sesame oil 1 large Vidalia (white) onion, coarsely chopped 1 whole cabbage head, cut into wedges 1 tsp sea salt 1 tbsp minced garlic Directions: 1) Pour oils in large skillet/wok and heat to high temperature for 2 minutes. 2) Add onions and stir-fry until they are nicely browned but still crisp-tender. 3) Add cabbage, salt and garlic to skillet/wok and stir-fry on high for 5 minutes, then reduce heat to medium-high and continue to stir-fry for 5-10 minutes until cabbage is cooked to a crisp-tender level of doneness. I love my cabbage this way. I’m not the typical Southerner. I don’t want my cabbage “cooked to death”. I don’t want cabbage that’s cooked to an unidentifiably soggy mess.
