Storing/freezing tip French beans True, nothing can beat the taste or texture of fresh things, but at times these frozen stuff come so handy. Again, beans too, go up thrice the price during off season. So this tip helps save on time, money and fuel (frozen things cook faster) Method Buy as fresh and tender ones as possible. Old ones taste no good. Snap the ends and string them. (Pic 1) Wash them, rubbing each one properly, under running water and put them to drain (Pic 2) While doing this, sort out the thin, even ones and put them aside. These are good for sauteing with grilled meats. (Pic 3) Cut half the quantity in small cylinders. The thicker ones a little small and thinner ones, long. This evens out the cooking time. Spread a plastic sheet on a tray and spread the cut beans in a thin layer. (Pic 4) Now cut the remaining beans diagonally. This shape looks especially nice in soups, curries and rice preparations. Spread on a tray as above. (Pic 5) Cover the trays with a clean sheet (Pic 6) Stack the trays (Pic 7). Freeze for a day. Next day remove from the freezer, transfer to clean plastic bags and freeze immediately. When needed, just remove the required amount and add to the dish directly, no thawing, no washing :)
