Stracciatella Soup ( Italian egg drop) recipe: 32 oz chicken stock (either from can or make your own) 1/2 cup pastina macaroni 10 oz frozen chopped spinach ( or fresh spinach chopped) 1 egg ( my vegan friends egg are optional) Bring the broth to a slight boil then add your spinach, if frozen let it cook for about 5 minutes or so stirring and breaking it apart, then add the macaroni cooking for another 5 minutes, continue to stir should be pretty well cooked by then, mean while beat an egg in a separate bowl while stirring the soup add your egg keep stirring (you dont want scramble egg in your soup you want it all to combine nicely) this soup will be very hot .. when serving top with parmesan cheese, we use a chunk then hand grated pecorion roman cheese, this soup will warm you up on these cold winter days... but this recipe is endless... go crazy add some white cannelloni beans instead of spinach use escarole some crushed red pepper you cant go wrong!!!! Its so delicious no need for salt if you use cheese it has plenty of salt. I told someone about my soup and its been going around through there family hahaahha they are all making it and they love it... a 4 ingredient soup and affordable Manga!!!!
