Strawberries, Italian Style 3 baskets strawberries or peaches or a combination of both 1 cup sugar Juice of 2 fresh lemons Juice of 1 orange 1/2 cup Port and/or sweet vermouth 1 cup white wine Wash berries and remove tops, and peel peaches. Slice in medium sized pieces. Add to bowl and sprinkle sugar over fruit. Add lemon juice, orange juice, port and wine. Mix and refrigerate at least 1 hour. Serve in chilled glasses. Serves 10 to 12 Yummy Low Cal Baked apple 4 Granny smith apples 4 1/2 tsp. cinnamon 1 can diet black cherry soda Wash and core apples. Put 1/2 tsp. cinnamon in core opening of each apple. Place in 9 inch Pyrex baking pan. Pour soda over each apple. Bake at 325 til done (may be baked in microwave, also) Golden Potato Casserole 6 to 7 medium potatoes 1 pint sour cream 10 oz. sharp cheddar cheese, grated 1 bunch green onions, chopped 3 Tbsp. salt 1/8 tsp. pepper Boil potatoes, cool and grate with coarse grater. Add sour cream, cheese, onion, milk, salt and pepper. Turn into buttered 9 x 13 inch pan. Smooth top with spatula. Mix 2 Tbsp. melted butter and 1/3 cup bread crumbs. Sprinkle over top. Bake at 300 for 1 hour or til piping hot. Serves 6 to 8 Peach Potato Puff 2 cups mashed sweet potatoes 1 tsp. lemon juice 2 Tbsp. brown sugar 1/4 tsp. salt 2 Tbsp. butter 6 canned peach halves Ground cloves Mix first 5 ingredients and add a dash of ground cloves. Whip til fluffy. Arrange peaches in greased 10 x 6 inch baking dish. Pile with potato mixture. Dot with addition butter. Bake at 400 for 20 minutes. CHARLESTON CHEESE DIP Ingredients 1/2 Cup mayonnaise 8 oz. cream cheese, softened 1 Cup grated sharp cheddar cheese 1/2 Cup grated Monterey jack cheese 2 green onions, finely chopped Dash of cayenne pepper 8 Ritz crackers, crushed 8 slices bacon, cooked & crumbled (dice before frying) Directions Dice and cook bacon; drain well and set aside. Preheat oven to 350°F. In a medium bowl, mix the mayonnaise, all the cheeses, green onions & cayenne pepper. Transfer mixture to a shallow baking dish. Top mixture with cracker crumbs; bake for 15 minutes, or until heated through. Remove the pan from the oven; top with the bacon. Serve immediately with corn chips, bagel chips or crackers.
