Stuffed beef fillet with spinach & pine nuts Ingredients 1 piece beef fillet Fresh spinach leaves 1 clove garlic Ground nutmeg Zest of a lemon Pine nuts Bacon slices Sautee potatoes Roasted vegetables Red wine sauce Method Take the beef fillet on a chopping board on it’s side. With a sharp knife slit the meat and continue slicing until you have a flat piece of meat. Wilt the spinach with the garlic & nutmeg in a frying pan with a drop of olive oil. Spread the spinach over the meat, season with salt & pepper, add the lemon zest & pine nuts. Roll the meat tightly and roll in the bacon. Seal the beef steaks on a hot pan & finish cooking in the oven to your liking. Serve accompanied with the veggies, sautee potatoes & sauce
