Sunday Cook-Up time! This weekend is all about Leftovers +1 (or 2 or 3). Because were a small household, were still making our way through the last of last weeks holiday feast...and still savouring roasted turkey, honey-sweetened cranberry sauce and chipotle mashed sweet potatoes. Unfortunately, however, some holiday treats disappeared far too fast. That paleo eggnog pumpkin pie from paleomg topped with whipped coconut cream? Done in 2 days. By 2 people. (Probably couldve managed it myself in one, but that wouldve been slightly excessive.) So...todays cook-up is all about taking a breather and supplementing what weve already got. This means refreshing our supply of fresh veggies--especially tomatoes, peppers and greens (and perhaps a redo of our holiday arugula-fig-prosciutto-pecan salad). Plus, to keep things interesting, Im adding: a simple pumpkin cilantro soup, roasted carrots & mushrooms, and a quick grain-free paleo spiced coffee cake. By Wednesday (if not sooner), itll be time to add more animal protein. But fresh fish, grass-fed burgers or steak will be a welcome change once the turkey (and leftover turkey bone broth) runs out.
