Sunday Healthy recipe: Chicken Surprise(I made that name up) 4 4oz Chicken Breast 1 tablespoon of olive oil 1 small bell pepper chopped 1 tablespoon or minced or crushed garlic 1/2 c mushrooms portabella or Shiitake(white is ok too) 1 c. spinach Salt Free Seasoning like Ms.Dash 1/2 lemon Side Dish is Wild Rice 1. Season the Chicken with the Salt-free add the chopped bell peppers and let sit in the fridge for 30 mins. You can also opt for the Ms.Dash marinade salt free but beware of the cals. 2. Once chicken is done marinading then heat a skillet and add the olive oil to it. Add the chicken and peppers to the hot skillet 3. Once the chicken is finished remove from the skillet and add all the remaining ingredients except the Spinach. Dont add the spinach until the other vegetables are almost done cooking. Wild Rice: 1.c Wild rice Follow the instructions on the package for cooking for extra flavor replace half of the water needed with low sodium chicken stock Happy Eating
