Sundays are the day I usually cook several things to eat all week (prep day), so today I am making Loaded Potato Soup (lighter version) and chopped sirloin with mushrooms. Here is the recipe for the Loaded Potato Soup… 4 red potatoes cooking spray (i use the olive oil kind) 1/2 cup chopped onion 1 1/4 cups chicken broth (I use fat free-you can also find the lower sodium version) 3 tbsp all purpose flour 1 cup of skim milk 1 cup of unsweetened almond milk 1/4 cup light sour cream 3 slices of turkey bacon 1/4 cup shredded cheddar cheese Optional: chopped green onions (for a topping) salt and pepper to taste Microwave potatoes until tender (about 12 mins), cut in halves and set aside Spray saucepan and heat to medium, add onion and sauté about 3 mins Add broth Combine flour and 1/2 cup skim milk in a bowl, add to pan Add remaining cups of milks and bring to a boil stirring often Cook 1 min then remove from heat; stir in sour cream, salt and pepper Discard potato skins and mash potatoes into soup Crumble cooked turkey bacon over the top of the soup Add the cheese and green onions Enjoy!
