Sunday’s Sumptuous Star!!! *********************************** Enjoyed a hearty meal with Starfruit Curry (Oxomiya (Assamese) Kordoi Jhul), Cauliflower-Potato Curry, Rice, Cucumber salad and a piece of papad. The recipe of the Starfruit Curry is as follows: Kordoi Jhul – Starfruit Curry **************************** This is also a delicacy which is prepared in Assamese households. There are many different ways in which Kordoi (Starfruit) is eaten. Juice, Salad or made into a curry (at times with fish), or sometimes with other vegetables. There are many health benefits of starfruit and mom used to make me drink star fruit juice (without salt sugar) during the season. This curry is very simple to prepare. Not sure if this is the traditional way the curry is cooked. Just posting the recipe I learnt from my Mom Ingredients: • Starfruit ( 1) – Cut into star shaped pieces • Green chili (1) – slit lengthwise • A pinch of salt • A pinch of turmeric • 1 tablespoon of oil • A teaspoon of panchfuron( 5 speices) • 1 tablespoon of sugar (vary per taste) – Starfruit is kind of tangy and I only got hold of an unripe one. So used generous amount of sugar. With ripe starfruit which has a sweeter taste, the amount of sugar can be reduced. Method: 1. Coat about 3 pieces of starfruit with salt and turmeric and fry them in hot oil and set aside. I shall use them for garnishing 2. De-seed the pieces very easy to remove the seeds) and Blend the rest of the pieces into a fine paste with water. At this point some prefer to strain it to discard the fibrous residue and some prefer to have it just like that. I prefer to take in the fibers to retain the benefits. 3. Heat oil, thrown in the panchfuron and then thrown in the starfruit paste. Fry in medium heat till the water evaporates and the gravy looks almost cooked. Add salt, sugar and turmeric, mix well and fry for some more time. Now add ¼ th cup of water adjust per your desired consistency). Throw in the green chilli pieces and then cover and cook in medium heat for about 5 minutes! 4. Garnish with the fried starfruit pieces and enjoy with steamed rice!
