Supper tonight was a fast, tasty, meatless salad: Fiesta Taco Salad with Beans 1 15-oz can black beans, rinsed and drained 1/2 C taco sauce (salsa will do in a pinch) 6 C bite-size pieces lettuce 1 medium green bell pepper, cut into strips 2 medium tomatoes, cut into wedges 1/2 C pitted ripe olives, drained 1 C corn chips (may be hard to find but Food Lion has its own brand) 1 C shredded Cheddar or Mexican 4-cheese (4 oz) 1/2 C reduced-fast Thousand island dressing Heat beans and taco sauce in 2-qt saucepan over medium heat for 2 to 3 minutes, stirring occasionally, until heated. Toss lettuce, bell pepper, tomatoes, olives and corn chips in large bowl. Spoon bean mixture over lettuce mixture and toss again. Sprinkle with cheese. Serve immediately with dressing. 5 servings at 270 calories each, 12 g fat. A little high in sodium (730) with the corn chips. If your meal plan allows, add some sour cream. For the amount of calories, this recipe is densely packed with good-for-you stuff, especially for diabetics like me.
