Surprise your family with a restaurant-worthy Cashew Hummus! The best part is you’re the boss when it comes to dipping choices. Ingredients: 1 red bell pepper, deseeded and quartered 2 cloves garlic, roughly chopped 1 tbsp lemon juice 2 tbsp extra virgin olive oil ½ cup NESTLÉ Cream ½ cup water 1 can chickpeas, rinsed and drained 1 cup unsalted roasted cashews 1 tsp cayenne pepper 1 tsp paprika 1 tsp sesame oil Procedure: 1. Skin side up, place the red pepper under a griller or over broiler for 10 minutes, or until the skin is blackened all over. Remove from heat and set aside, covering with a clean dish towel or plastic wrap for 5 minutes to allow the steam to loosen the skin from the flesh. When cooled, peel off blackened skin and roughly chop the pepper flesh into pieces. 2. In a food processor, combine chopped roasted pepper with remaining ingredients. Blend until smooth, scraping the sides occasionally. 3. Serve with vegetable sticks or sliced pita bread.
