Swedish Sandwich Cakes-Kristi Pederson Schmidt version (for all you who asked!) Ingredients: humus, cream cheese, dill, cucumbers, radishes or cherry tomatoes, pomegranate seeds, basil leaves to garnish, djonnaise mustard (opt.)3 different kinds of bread of your choice, slices of deli cheese/meat of your choice. Do ahead: slice cucumber into VERY thin slices lengthwise with a mandarin cutter. Place onto paper towels to let them sweat out the water. Lightly salting helps draw it out. Flip onto fresh paper towels as needed until towels are dry. You can also gently blot them. Repeat procedure for the tomatoes or radishes depending on what you want to use to garnish. Soften cream cheese on counter, add dill and whip by hand. Remove seeds from a pomegranate (to find out how, search youtube for a tutorial like I did ; ). 1.Cut bread into circles with a cookie cutter. 3 slices per sandwich, 1 of each kind. *tip: if bread wont cut cleanly, leaving it out for just a few minutes before cutting will harden it just a bit. But be careful not to over dry! 2. Cut one slice of cheese and deli meat per sandwich into circles with the same size cutter (make sure meat is fairly thick to make nice circle). 3. Butter bottom circle with a THIN layer of humus. Add meat slice. 4. Butter the next piece of bread with a THIN layer of either dijonnaise or cream cheese mixture. Add cheese slice on that. 5. Stack the two layers neatly together and add the third piece of bread. 6. Whip the cream cheese/dill mixture if a little hardened from resting.Then, simply frost the entire sandwich. 7. Cut the cucumber strips to size for the side of the sandwich and wrap gently. They will stick easily to the cream cheese. *placing the cucumber with the little edge of the peel at the top leaves a nice finish. 8. Add about 4-5 circles of tomato or radish (depending on your choice for garnish) to the top. 9. Add a portion of a basil leaf (or any edible herbal leaf) to the top center. 10. Garnish with 4-5 pomegranate seeds. *tip: to get the leaf and seeds to stick, use a toothpick and add a small clump of cream cheese to the center, then neatly stick the leaf and seeds onto sandwich, using the cream cheese like a glue to hold them in place. Important! Cover sandwiches on the plate with a VERY slightly damp paper towel and plastic wrap to keep from drying out. Uncover just before serving. MAKE THE DAY OF. Refrigeration will cause sweating and cucumbers will probably slide of sandwich. In any tea, it is not the complicatedness of fancy recipes, but the small touches like a neat, clean presentation, the little dashes of flavor (dill,herbs, almond extract, lemon zest) the surprise touches such as an edible flower, and of course, an elegant table setting that make them fun and special!
