Sweet Potato and Swiss Chard Mash Guilt-free and high in antioxidants! 3 medium organic sweet potatoes (about 1 1/3 pounds) 1 bunch organic Swiss chard Extra-virgin olive oil Salt and pepper to taste Peel the sweet potatoes and cut them into one-inch thick chunks. Place in a sauce pan and add enough water to almost cover. Add a generous pinch of salt, cover the pan, and bring to a boil. Meanwhile, rinse the chard leaves and tear out the stems. Reserve the stems for soup or stock. Cut the leaves into one-inch ribbons. After about five minutes, add the leaves to the pot and cover for a minute or two to wilt the leaves. Uncover the pot, raise the heat, and boil off all remaining water, stirring occasionally to prevent sticking. When the water is gone, turn off the heat, drizzle with olive oil (or a little dairy-free butter), stir, mash a little, and taste for seasoning. Serve warm.
