Sweet and Sour chicken Cut chicken breast into small pieces, and toss them in a bowl with 1/4 cup of water, some salt and garlic powder. Marinate in fridge for an hour. Meanwhile, make the batter... In a mixing bowl, combine 1/4 cup corn starch 1 cup water 1/2 tsp salt 1/2 tsp powder Mix...then add 1 cup flour Keep mixing...and scraping down sides of bowl. Then add an additional 1/4 cup of flour and 1 Tbs of baking powder. Batter will be thick! Once chicken has been in fridge for about an hour, drain the excess water and put the chicken in the batter and toss until its all coated. I used a deep fryer (with no basket) to cook, but you can use a deep pot or pan with plenty of hot oil (370 degrees) too. Place the battered chicken into the hot oil a few at a time- using a skewer or toothpick to move them worked great! Constantly move the chicken around with a slotted spoon so it gets golden brown all over...cook for 3 minutes and place on paper towels to drain oil. Once you have cooked all of your batches, put it all back into the oil for an additional minute to crisp it back up! Serve with your favorite dipping sauce and veggies and rice -enjoy!!!!!!!
