Sweet and Spicy Chicken Thighs 6 Servings of 2 thighs each 1 hour and 50 minutes 1/4 c soy sauce (use low sodium if watching salt intake) 3 tbsp. honey 1/3 c rice vinegar 2 tbsp. sesame oil 1 1/2 tbsp. chile paste 7 garlic cloves minced 3 or 4 slices fresh ginger (optional) 12 bone in chicken thighs, remove skin for healthier version Mix together all ingredients except chicken. Pour mixture into zip lock baggie and add chicken. Marinate for 1 hour in fridge Preheat oven to 425 degrees Remove chicken from marinade, reserve marinade Cook marinade in small sauce, bring to boil and reduce heat. Cook till marinade become thick and like syrup, stirring often. Put chicken on rack, place rack on roasting pan. You can spray the rack and the pan with cooking spray for easier clean up.
