THE TWELVE HERB-DAYS OF XMAS.- DAY 1 - ROSEMARY. Herbs are the easiest way of adding flavour to any Xmas dish. Follow us for the next twelve days to get a bouquet of good ideas. POTATOES - Rosemary is wonderful with roast potatoes, but add the leaves just before serving. CHIPOLATAS - Use the rosemary stalk to skewer your chipolatas and cook like a kebab. ROOT VEGETABLES - crush the leaves and add to olive oil to add flavour. CAULIFLOWER - you can add some rosemary to the cheese sauce to give the dish a little extra zip. VEGETARIAN - for a vegetarian bake, add some rosemary to the crumble mix. LAMB - if you are planning an alternative to turkey, dont go down the Jamie route of adding the complete stalk (including leaves) to the lamb prior to cooking. All that will happen then is you burn the rosemary. What you should do is strip the stalk of its leaves and skewer the lamb with the bare stalk. Once the lamb is cooked and is resting then rub the leaves into the lamb with some butter.
