TIP: Improve glucose tolerance by managing the glycemic index (GI) of the food you eat. Favor whole foods that are cooked gently rather than at very high temperatures. To reduce the GI of high GI foods, add “safe” fats (butter, olive oil, coconut oil) or acids (vinegars, lemon, lime) to them when cooking or flavoring. Pickling foods also reduces the GI of foods—try kimchi, sauerkraut, and pickled ginger(not a redhead).
