TIP: When using an offset smoker with the chimney stack on the opposite side, one controls the temperature by opening or closing the chimney. If your in a smoke cycle, usually close the chimney. Your heat may go down to about 100. Dont stress. You can get it back up. When you want to increase the heat in the pit, open the chimney stack and the coal box slightly to allow more airflow. This should get your heat back up. When you get to the desired temp, you may slightly close the chimney stack again. When your temps begin to drop, you may also fan your fire and/or throw in another small log. Preferably ironbark. Hope this is of help to someone.
