TURKEY CHUNK CHILI WITH GREEN BEANS, BEETS & YAMS Makes 4 servings 1 lb of turkey tenderloins, cubed 3 garlic cloves, minced 1 large yellow onion, diced 2 vine tomatoes, cubed 2 jalapenos, sliced 2 small organic beets, cubed and baked 1 medium garnet yam, cubed and baked 2 cups frozen green beans 1 jar of Organic Medium Salsa Water 1 teaspoon chili powder 1 teaspoon cumin Pinch of cloves Sea salt ¼ cup fresh cilantro, finely chopped Coat a large non-stick skillet with PAM or cooking spray and heat on medium. Add garlic and onion, and sauté for about 3 minutes then add jalapeno and cook for about 1-2 minutes. Add turkey tenderloins and let cook until almost done. Be sure to mix in pan as to cook all sides. When turkey is almost completely cooked, add tomatoes, salsa and about a cup of water. Stir in seasonings. When mixture begins to boil add beets, yam and green beans. Cover and let simmer for at least 15 minutes. Sprinkle the cilantro on top and stir. Turn off flame, let it rest for a few minutes and serve. Nutrition Facts (per serving; each serving size approximately 4 oz): 251.75 calories, 30.55g protein, .85g fat, 26.8g carbs
