TURKEY MEATLOAF WITH LEMON ROSEMARY GLAZE All you need: Meatloaf 1 large egg 2 lbs. of 93% lean ground turkey 4 oz. shiitake mushrooms, sliced 1 small red onion, chopped ½ red bell pepper, chopped ½ cup low-fat milk ½ cup old-fashioned rolled oats 1 Tbsp. chopped rosemary 1 Tbsp. lemon juice 1 tsp. lemon zest Salt & Pepper to taste Glaze 3 Tbsp. light brown sugar 1 Tbsp. chopped rosemary 1 Tbsp. Dijon mustard 1 Tbsp. lemon juice 1 tsp. lemon zest All you do: Preheat oven to 350F. Spray 9x5 inch loaf pan with cooking spray. In a large bowl, lightly beat egg. Add remaining meatloaf ingredients and gently mix until just combined. With rubber spatula, evenly spread mixture into prepared pan. Bake 30 minutes. In small bowl, whisk together glaze ingredients.
