Tamarind Tuna with Green Pepper 2 Tuna Steaks, cut into bite sized pieces 2 tbsp Tamarind concentrate Chilli flakes 2tsp Fish sauce Garlic clove Piece of ginger Red onion Green pepper Olive oil Black pepper In a medium bowl mix tamarind with 1/2 cup of water & add fish sauce, tuna chunks and chilli flakes. Marinate for 1/2 hr. Mince garlic & ginger. Chop green pepper & slice red onion. Heat 2tbsp olive oil in a wok and add 2 tbsp water. Stir fry garlic, ginger & green pepper. Add tuna & reserve marinade for later. Stir fry for 5 mins and add a few spoons of marinade. Do not over cook. Serve with rice or noodles. Garnish with red onion rings.
