Tender Spinach and Plum Salad Here is another salad I experimented with in Salad Month, and felt very pleased with myself. :) Dressing 5 tbsp EVOO 1 tbsp balsamic vinegar Juice of half an orange Juice of half a lemon Freshly ground pepper Salad 3 plums, firm and not too ripe, pitted and thinly sliced A good big bunch tender spinach leaves. A two inch square of Feta , thinly sliced. A handful cherry tomatoes. Kosher salt. Whisk the dressing ingredients in a salad bowl. Just before serving , add al the salad ingr except salt and toss. Sprinkle kosher salt over salad and serve . This should make six servings. Delicious!
