We have developed a hot sauce and I am writing this to let people know of our experience in which we used Peter Kam and First Commercial Kitchen to grow our business. We started out, as most small food producers do, with a family recipe. Our desire to take it to market had been hindered by the inability of our production capacity to keep pace with demand. We were making our product in the kitchen of a local restaurant during closed hours. We solicited FCK at the urging of my late Father who had struck up a business relationship with Peter Kam. This past April we finally ran a test batch of our hot sauce and the results were fantastic. Not only did Peter assist us in duplicating our recipe, but he also insured that our label was correct from a regulatory standpoint and that an HACCP was developed to insure what we were doing was safe and legal. His knowledge of these processes is invaluable. I have referred two people to Peter and FCK. Both asked me why him. I replied that he was the only one in the state of Hawaii who had both the knowledge and facility to execute their business plan. Peter’s ability to solve problems were evident from the outset. This is due to his years of experience. His staff was friendly, helpful and knowledgeable. Going forward, I look to Peter and FCK as a business partner as our company grows and provides a premium product at a fair price. I could not do this without the help of Peter and FCK.
