Thanks to everyone who offered up tips on how to cook asparagus. After work, I walked to the Shop Rite near my office to buy some asparagus. Unfortunately, they had no fresh asparagus in stock! Go figure! So, I got a pack of beef stir fry fixings (thinly sliced beef, onions, green and red peppers) and a small amount of fresh snow peas. I also bought a small container of Green Giant frozen cut asparagus. I paid for the stuff and walked the 2.5 miles home while listening to some fast-paced Buddhist music on my iPhone. Upon arriving home, I heated the frozen asparagus for a few minutes (less than what the package directions called for) in the microwave. While the asparagus was cooking, I dumped the stir fry fixings and the snow peas in a hot pan and I stir fried it for a few minutes in the hot olive oil until the meat started to lose its red color. Next, I added a small can of sliced mushrooms and a bit of light soy sauce. I nuked a packet of Seeds of Change quinoa and brown rice, then mixed it in with the stir fry, heated the mixture for a few minutes with the pan covered. And this is what I ended up with. It tastes quite good and I have enough left over for another two dinners. The asparagus was a bit too tender, probably because of it being frozen. As soon as I can get some fresh asparagus, I will try the various methods to cook it that were mentioned here earlier. All, in, all, a nice walk home and a tasty and quick and healthy dinner.
