The Asian palm civet is a catlike animal that lives in Southeast Asia. It eats raw coffee beans, poops them out, and the beans are then collected, washed, roasted, and sold for up to $500 per kg (2.2 lbs) under the name Kopi Luwak. As you can imagine, such an expensive commodity is bound to get cut with regular beans to help stretch the product. Scientists have developed an “electronic nose” to detect the appropriate levels of of citric acid and malic acid that should be present in the brewed pure Kopi Luwak coffee, ensuring that you are literally getting the crappiest cup of coffee available.
