The Baking Bears Fluffy Mashed Potatoes 2.5 lbs of potatoes, peeled 1 tablespoon salt 4oz package cream cheese 4oz Salted Butter 1/4 teaspoon nutmeg 1/2 cup half and half I keep my potatoes in large chunks, usually cut in half. You end up with more potatoe flavor. Boil potatoes with salt water. Drain. Mash with potatoe masher and then with electric hand mixer. I use the paddle attachment of my kitchenaid and it makes the fluffiest potatoes. Add rest of ingredients and whip till fluffy. I let people add their own salt and pepper at table. Serve with a little sprinkling of parsley if you like.
