The June issue of SHAPE magazine notes that foods high in Vitamin C are not only good for your immune system but also could protect against stroke. A new study from Frances University of Rennes shows that people who had suffered a stroke were more likely to have low blood levels of vitamin C than non-stroke victims. Not enough C vitamins may raise blood pressure, a risk factor for stroke, according to neurologist and author Stephane Vannier, MD. Vitamin C helps build collagen, with is key to blood-vessel health. The daily recommended helping of Vitamin C is 75-milligrams. Load up on red peppers (118mg per cup), broccoli (78mg per cup) and oranges (63mg per fruit). Fresh, crisp fruits and vegetables add natural flavor and crunch to your food...and can keep you healthier!
