The Lemon Grass Chicken turned out great. If you are like me you like to sample and learn original dishes from places in the world. This recipe is a classic example of cooking from the way south in Vietnam. Part of her family is from south of Saigon in the rice rich very tropical Mekong delta. probably 10 degrees latitude above the equator. her grandmother lived on one of the main branches of the Mekong river. This recipe for lemon grass basically include tons of pressed garlic, a lot of finely chopped lemon grass(in the frozen section of the Asian market), fish sauce(nuoc mam), and molasses. That is the core. You add in a little fresh turmeric, a chopped up Serrano chile, and a couple of those little read chile peppers. We did it in as original manner as was possible. I got a free range chicken and we chopped it up into small pieces. You end up with some very tasty and moist chicken with a sauce. Put it on a plate with pile of brown(or white) rice and you have a fine dish. If you note the second picture it is Gwens aunts homeade molasses. It is a bit different than the molasses you buy in a store but regular molasses would do. Anyhow a great evening learning something new. And by the way, if you got the essences of the four main ingredients you wouldnt need to be too original. It is the combination of the flavors that makes the recipe.
