The Mobile Food Service class from CNM had a wild weekend in Santa Fe during the Folk Art Festival. We served our shredded pork shoulder, marinated shrimp, and tri-tip steak tacos along with marinated shrimp and tri-tip skewers. One of the biggest sellers was our variety of fantastic cookies prepasred by the baking students (thank you Chef Penny and all you dedicated present and future culinarians that helped to make the festival a resounding success) These tasty treats included chocolate chip, peanut butter, snickerdoodles, jelly filled sugar cookies, and Oreo cheesecake cookies that were to die for! We had the most amazing torential rain storm on both days (especially yesterday when it seemed to go on forever while patrons scrambled to find shelter from the down pour). The culinary students that I worked with were really bustin it out in such a professional and pridefull manor. Chef Dave kept us on track and worked really hard (as always) to set up and promote our efforts to make the CNM Culinary Arts program and The Street Food Institute a success. I hope that all of our future events are as fun and successful as this one was! Have a great week everyone!
