The adventures of Maeve in the kitchen. She picked her own menu this week and very excited to make her favorites. Artichoke steamed in white wine, lemon and garlic and BQ Meatloaf. She made a lemon garlic butter for dipping the artichokes. She did an awesome job trimming up the artichokes leaves. (I cut the tops and stems) and the meatloaf was delicious although she decided it could have been mixed better. Recipes: Artichokes: After Cutting off a small portion of the top and taking off the stem trim the barbs off of the leaves. Kitchen sciissors work very well for the trimming. In a large pot place the artichokes top side down. To the pot add 1/2 cup of your favorite white wine, 2 tbs lemon juice and 3 cloves minced garlic. Bring to a boil and then lower to a low simmer for 30 minutes. Lemon butter dipping sauce: 1/2 cup butter, 1 tbs lemon juice and 2 cloves minced garlic melted together in microwave and put in a small dish for dipping artichoke leaves. Meatloaf: In a large bowl mix 2 lbs ground beef, 1 cup BQ sauce, 1 cup bread crumbs, 1 onion diced, 1 egg and salt and pepper to taste. Mix together well put in a loaf pan and cook at 350 degrees for 1 hour. Let stand for 10 minutes before cutting
