The article on dessert in Esquire this month makes me want to cry. In a time when pastry chefs are just starting to get the acknowledgement they deserve someone from our industry goes and smacks them back again. I know so many pastry chefs, be they male or female, that are creative geniuses and genuine artists working with the most delicious medium imaginable. I wont link to the article because I dont want it to gain extra momentum but go out and enjoy your desserts and love your pastry chefs.
