The beginning of Use It Or Lose It Vegetable Soup. We had a lot of leftover raw veg after traveling on business this week. Not as much cooking as we had planned happened upon return. Time to count ingredients: Garlic, onion, celery, carrots, bell pepper, zucchini, chard, spinach, broccoli, asparagus, parsley and tomatoes with canned black beans and garbanzos included for protein. Will probably add whole wheat ditalini near serving time so Hannah will eat it; soup with no pasta is a no-go for her.
