The baking sheets have thicker sides that allow you to place heavy roasting pans on them and remove with ease due to sturdiness and keeps any bubble overs inside the pan. It is great for cooking items like biscuits when preserving the perfect shape is really not an issue too. You can obviously use a sheet pan as a cookie pan but having one with no sides is truly kind of neat!
