The food industry claims that American trans-fat consumption (from consuming hydrogenated fats) is only 6-8 grams per day, not enough to contribute to the epidemic of chronic disease. But, the FACTS reveal a much higher consumption of trans fats. For instance, total per capita consumption of margarine and shortening is about 40 grams per person per day. This alone equates to about 12 grams of trans fat per person per day. In reality, daily consumption of trans fat among young people can be considerably higher. An example is snack chips, which teenagers consume in abundance, often contain 48% or 45.6 grams of trans fat in a small ten-ounce bag of chips - which a hungry teenager can devour in a few minutes. Consumption of trans fats at this level (and this is only one ten-ounce bag of chips) is EXTREMELY UNHEALTHY. Trans fats are toxic to the body. They incorporate into the cell membranes as though they were the natural cis fats. Once in place, trans fatty acids wreak havoc with cell metabolism. For example, trans fats are associated with cancer, atherosclerosis, diabetes, obesity, immune system dysfunction, low-birth-weight babies, birth defects, decreased visual acuity, sterility, difficulty in lactation and problems with bones and tendons. Trans fats are POISONS just like cyanide - they just kill at a slower rate. There are volumes of scientific studies showing that ANY hydrogenated fat is very toxic to the body. People are having severe health challenges and even dying from continual consumption of hydrogenated fats. These facts are common knowledge to the FDA.
