The fortuitous mistake cake. Todays creation started out as a mistake a year ago but turned out to be one of the most delicious things to come out for Fall. It all happened when I had a communication breakdown with one of my bakers who thought I said make carrot cake and then didnt put any carrots in there at all. Upon seeing the already in the tin batter and asking where are the carrots? and getting a blank stare, I decided I was too lazy to grate a pound of carrots and improvised. I poured out the batter, added pumpkin puree and pumpkin pie spices and a ton of cinnamon and baked it. When it came out of the oven, all heavenly smelling and amazing tasting, I slapped some white chocolate icing on it and served it as cake balls. Ever since then, I make this cake when I want something that tastes like Autumn in New England and dont feel like grating carrots. Not that Ive ever been to New England but if I had, Im sure it would smell like this. I used this cake for my creepy Halloween eyeballs and got a lot of compliments on it so I decided to make the cake version today and top it with a swathe of Swiss meringue caramel buttercream with a sprinkling of Cinnamon. I also like to put a crumb and a crunch on all my cakes as well as a drizzle of something. Because I cant leave well enough alone, today I added some crumbs of the actual cake because they are so pretty, some toasted and crushed Cinnamon Raisin cookies and my homemade dulce de leche as the drizzle. I took a little bite of the scraps that remained on the cake plate at the end of the day and it was a blast of Autumn on a beautiful, clear Kampala day. See, mistakes pay off...eventually.
