The most Michelin-starred chef on the planet, Alain Ducasse, has revamped one of his Paris restaurants in a decidedly un-French way – the menu at the swanky eatery is now largely vegetarian; fish, seafood and meat do make an appearance, but the focus is on fresh, organic produce. The planet has increasingly rare resources so we have to consume more ethically, more fairly, said Alain Ducasse. We couldnt have put it better ourselves!
