The most amazing creamy potato and pumpkin soup ever and I MADE IT! I love this page. Thank you for the addiction... I mean inspiration. Haha Recipe 700g butternut pumpkin cubed 3 large potatoes cubed 1.5 medium sized white onions finely diced I litre of water 2 heaped tablespoons of chicken stock powder Salt and pepper to taste Chuck it all in. I put it on low for about 2 hours, high for nearly 2 and then low again for about an hour. I guess just until all the veggies were squishy. Then I mashed it with a potato masher ( I like a chunkier soup) then threw in 200ml of thick cream. Stirred that in and topped it with another dollop of cream and some parsley to serve.
