The spinach stuffed chicken was outstanding last night. Heres the recipe: Ingr.: 3-4 boneless chicken breasts. 10 oz. pkg. frozen spinach. 1/2 cup sour cream. 1 cup shredded mozzerella. Small spoonful minced garlic. Salt. Pepper. Bacon. Microwave spinach till limp. Squeeze out liquid. Sir in sour cream, cheese and garlic. salt and pepper to taste. Pound chicken flat. Stuff as much of the spinach mixture as you can in chicken and fold over. Place chicken in baking dish as well as any left over spinach. completely cover chicken with strips of bacon. Bake uncovered at 375 degrees for 35 minutes then increase to 500 degrees last 5-10 minutes to crisp bacon. Good stuff right there Friends.
