The sunshine is peeking through the front door, instead of the picture window. It doesnt seem like it gets light any sooner, but were making progress. One more box of tomatoes to go. Ill be glad to get them in the pantry! It wont last until my garden tomatoes are ready, but the twenty some quarts will get us that much closer! Its a beautiful day in Fremont County. Clear blue sky, and no wind. Since Don talked me into meatloaf last night, well use up the chicken breast for oven fried chicken. It is a great way to cook chicken breast, as it keeps it super moist. Oven Fried Chicken 1/2 C mayonnaise 1 T Franks hot sauce 2 C crushed Rice Crispy cereal, or Cornflakes etc... 1 tsp dried parsley 1 tsp Mrs. Dash seasoning 1 tsp salt 1/2 tsp pepper In a large zip lock bag, place the chicken breast, hot sauce and mayonnaise. Let this marinate in the fridge. You may need to add more mayonnaise when you get ready to bread it. Put the cereal, and spices in another gallon zip lock, and use a pan or rolling pin to crush the cereal. Pour it out into a shallow dish, and coat the chicken in it. Place on a baking rack inside a baking sheet. Bake at 400*F until the juices run clear, or the temperature reaches 160 degrees when a thermometer is inserted in the thickest part. Carry over cooking will raise it to 165-170 degrees.
